Low FODMAP Curried Potatoes

Serves 4

Ingredients: 

1.8lbs potatoes

2tsp Foddies Curry Powder

1tbs Garlic infused oil

1tbs Extra virgin olive oil

 

Method:

Preheat oven to 380F 

Peel and dice potatoes into bite sized cubes and place into a large pot

Cover the potatoes with water and bring to a boil

Once boiling, cook for 5 min then drain and add in the oil and curry powder

Spread potatoes onto baking tray and cook for 20-30mins until potatoes are cooked through and crispy.
